A common misconception is thinking that going “on a diet” means eating salad after salad. People often feel they have to deprive themselves and won’t enjoy their food anymore. At Awaken180° Weightloss, we veer away from the word diet and instead promote a lasting lifestyle change. There are so many easy, delicious ways to eat your veggies while enjoying them. You don’t have to confine yourself to just eating salads, or just eating raw veggies at all. Mixing up the way veggies are made and consumed will keep your meal plan fun and your results on point!

Spiralized Vegetables

There are so many vegetables that you can spiralize! From zucchini noodles (zoodles!) to summer squash, cucumber, turnip, and even bell pepper. Spiralizing your vegetables and pairing them with seasoned animal protein is easy and delicious. Many supermarkets now have already spiralized vegetables fresh and ready to be eaten. If you’d like to make your own, spiralizers generally range from $15-40. Zoodles are one of my favorites! Here’s a great Shrimp and Zoodle recipe in a tasty garlic butter lime sauce!

Ingredients:

  • 2 tablespoons butter
  • 1 lb jumbo shrimp (16-24), shelled and deveined
  • 4 cloves garlic, chopped
  • 1 pinch red pepper flakes (optional)
  • 1/4 cup chicken broth
  • 2 tablespoons lime juice (~1 lime)
  • 3 medium zucchini, cut into noodles
  • salt and pepper
  • 1 teaspoon lime zest
  • 2 tablespoons cilantro, chopped

Dehydrated or Baked Veggie Chips

When you’re craving a salty, crunchy snack, dehydrated veggies are delicious, crispy and nourishing! Kale, cucumber, sweet potato, beets, turnip, green beans, and carrots are a few great choices. You can bake veggies to make crisps, but the dehydrator can make them more crispy with less oil. Toss them in sea salt and pepper, garlic salt, or cayenne pepper for a flavorful kick! Here’s a simple recipe for Garlic Sriracha Kale Chips in the oven.

Kale chips
  1. Remove kale leaves from the bunch, rinse, and wrap in kitchen towel to dry
  2. Mix 1 tablespoon of garlic powder, 1 tablespoon of sriracha powder, and 1 teaspoon of sea salt in a bowl
  3. Drizzle 1-2 tablespoons of extra virgin olive oil or avocado oil
  4. Bake at 275 degress Fahrenheit for 25 minutes or Dehydrate at 115 degrees Fahrenheit for 3-5 hours depending on desired crispness

Cauliflower Rice

Cauliflower rice is an amazing staple for meals that keep your weight goals in mind. You can rice your own cauliflower or simply purchase it pre-made at the supermarket. Cauliflower rice can be used to fill burrito bowls, stuff peppers, or simply have on the side with seasonings. Cauliflower is high in fiber, vitamin C, and antioxidants! Here’s a delicious recipe for stuffed peppers with cauliflower rice:

  • 4 bell peppers
  • 1 lb ground beef
  • 2 cups cauliflower rice
  • Salt and Pepper
  • 2 tablespoons olive oil
  • 1tsp oregano 
  • 2 cloves garlic 
  • 1/4cup chopped onion
  • 1/4cup tomato sauce or Frank’s hot sauce to spice it up

Instructions:
